I love these types of events.
You have a gorgeous setting, about 60 vendors that are all dedicated to the environment, good health and nature.
Throw in some gorgeous birds, lots of participants that also care about the environment, good health and nature and you have the makings for a real fun weekend!
This is my second year as a vendor. My first was 2010 and it was also my first year in business and my first festival.
I really enjoyed myself, started a lot of conversations, met a ton of really great people and added about 75 people to my newsletter list. Many have become clients and some even friends.
My good friend Audrey was on of the attendees last year. She is an awesome graphic designer and has a website that you just have to check out. It is the PeaceandHealthCafe.com. It is a great site with recipes, tips, meditation and yoga! Love it!
So my veggies for my demo are packed and all my marketing collateral is in the car. I am really excited because it is all about the conversation.
I will be starting some tomorrow and I am sure I will make new friends and find people that are interested in improving their health through eating delicious foods and achieving a balanced lifestyle.
Come on down and say hi!

So what’s up will all the juicing you hear about these days?
Juice bars are springing up everywhere.
You see health food stores offering juice fasting programs and you have to wonder what that is all about.
So here’s the scoop!
At a time when so many people are obsessed with supplements – juicing is the most complete and natural form of supplementation around.
All the nutrients that a body needs are present in balanced quantities in fresh fruits and vegetables. They are best utilized by your body in their whole form not in separate supplement form.
Juices supply us with the vital building blocks for cell regeneration, in this way are true longevity food.
Juices tend to satisfy our thirst and therefore we tend not to reach for other less nutritious foods.
They are the only beverage the supplies us with real, vital energy .
Take a look at Joel Fuhrman’s Green Longevity Drink listed in the recipe section below. My husband and I drink one of these each morning and have done so for the last 21 months. It is filling, satisfying and let me tell you, keep you as regular as anything out there.
Imagine chopping all those ingredients and putting them into a bowl and trying to eat them. It would take a lot of time and a heck of a lot of chewing. By juicing them your are extracting their organic water, chlorophyll and enzymes from heaping mounds of fruits and veggies without using any digestive energy.. Enzymes in fresh fruits and vegetables have the vital role of converting food into body tissue and energy. Enzymes are also involved in metabolism, so one of the more valuable health benefits of juicing is that it can increase metabolic rate. Juicing also ensures that the body is getting sufficient amounts of phytochemicals, substances in plants that are considered among the most powerful ways to combat disease. While most people do not eat enough raw fruits and vegetables to obtain the amount of phytochemicals that would make a difference, it is relatively easy to drink enough juice to obtain sufficient amounts of these powerful nutrients. In addition, antioxidants and other immune boosting nutrients are concentrated in juices.
Juicing can therefore help to accelerate recovery from illness. In fact, juicing with specific combinations of fruits or vegetables can target particular conditions and improve or alleviate symptoms.
A juicer separates the fiber of the vegetables, leaving you with only the pure organic water from the fruits and vegetables. The reason that this is important is that your body is able to digest more organic water without expending any energy or getting full on fiber. The enzymes go right to the cellular level to do their work. Remember, when enzymes can go straight into the cells they can go to work cleaning out the toxins that make your leaner and healthier.
So what about those bottle juices? They appear to be fresh but they are not. They have been pasteurized, which kills the live enzymes. Bottle juices don’t count as green juices and should be avoided.
So how about those juice bars? It is a good place to get fresh juice but don’t assume that anything you get there is good for you. Many of those chain stores are a made of blended juices with frozen, sugary fruit soy or frozen yogurt. This is distinctly different from what we are talking about as healthy. These are filled with sugar and tons of calories and contain little nutrients.
So what about those green powders? They are not the same as green juice. They are lacking in organic hydration. They are better than nothing but real fruits and veggies are the key.
When buying a juicer, look for one that extracts the pulp. Breville makes a great juicer. So whether you are going to start juicing at home or know of a store that you can obtain fresh organic juice, juicing fruits and vegetables is a great way to improve your health.

Where do I start. Oh yeah, I love pizza.
I haven't been able to eat regular- bubbly, gooey, cheesy hot pizza for a while now.
The cheese and the gluten in the crust just kill me.
I won't get into the details but it ain't pretty!
So I started to really play with gluten-free crust and
dairy -free cheeses.
I found a great crust made from almond flour that is really unsual but so savory and delicious it is a killer. Let me know if you want the recipe!
Yesterday I made pizza out of Pamela's Gluten-Free Bread Mix. I am not sure what happened but it was sticky and goey, not in a good way. It barely rose and it was nearly impossible to spread on the pizza pan. The end product looked nice but really had a bad taste and a super dense feel.
I am going to play with another one tonight that uses Namaste's prefect flour blend. The recipe that I am using strongly resembles a more traditional crust. I know my pizza crusts.
I really like OrganicVille's pizza sauce (their bbq sauce is great on a BBQ chicken pizza. I have also been using daiya pepper-jack and mozzarella shreds. It is gluten-free, soy and dairy free and has a nice taste.
If you have a gluten-free pizza crust pass it along. I'd love to hear from you
Runnin' on Mountain Dew, NOT!
My husband is s pretty observant guy. And I like that.
As you could imagine we talk all the time about our observations of people's shopping, eating and health habits.
We decide that really and truly, people know what they should and should not be eating but they don't think that it applies to their health. they get lucky and live until 90 or get unlucky and die young.
The unfortunate thing is that it takes too long to see the affects of our bad behavior and by the time we do start to feel bad and get sick we think that it is natural aging or maybe a genetic defect.
One of my husband's best comments to date on this subject came when we were discussing cars...which we do a lot....he made the observation that the vast majority of people take much better care of their cars than they do their own body
You would never see a person pour Mountain Dew into the gas tan of even the most inexpensive car and expect it to start right up and drive on down the road.
But that is what the vast majority of people do with their food. They dump soda, coffee, processed foods that contain chemicals, additives, dyes and foods and I use that term loosely and are shocked that they have cancer, heart issues, problems concentrating, sleeping, skin and digestive issues. They wonder why their kids have behavioral problems and can't focus and concentrate.
Your putting Mountain Dew in your gas tank - come on! You sure want that car to run well make it to work everyday, carry you back and forth to the cape into the mountains skiing.
Same hold true for your body. You will have to ride in it for the next 60-90 years. Yeah a longer ride is great but wouldn't you like it to be smooth and problem free? No flat tires, leaky radiators or transmission that's slipping - yeah the motor head is rubbing off, I know what these things are. 8-).
This is not rocket science but what you eat matters. You have the ability to choose what diseases you get, how you feel, how you function and look.
You have a choice. Dont' give that away.

So I get asked all the time why women? Why digestion?
I grew up with three brothers, always held jobs where my boss and co-workers were men. Men are easy. They are fun, don't hold grudges and pretty reasonable.
So why women? Working with women has a complexity that I adore. They tend to have issues that are not commonly seen with men. They are emotional, deep and want to be heard. When empowered to demand good health and given the knowledge and the support they need they excel in a way that is really exciting to see.
There is a camaraderie that I can't find in men. Maybe because I am a woman. We have a universal experience that we share with all the women that came before us. We are giving and nurturing and need someone to affirm that our health holds an importance that our busy life seems to ignore. We need an advocate that gives us permission to put our health at the forefront of our priorities.
A healthy digestion is a key to good health. Without the ability to absorb nutrients efficiently and eliminate waste and toxin we function at a diminished capacity reducing our potential to achieve are life passions and goals.
I love to help women customized food and lifestyle choices that support their need to address their digestive issues in a natural and permanent way. My mission is to show women that conventional medicine does not always hold the most affective and natural remedy for their digestive issues. The body will heal itself if given the right conditions. I am here to support my clients to create those conditions.
Let me know if I can help you.

Attention all you ladies that suffer with constipation, diarrhea, gas, bloating, migraines, skin issues, brain fog, depression and generally feeling rotten!
If you have already been diagnosed or suspect that you have an issue with gluten in your diet this members-only club is just for you!
Discover how the gluten you are eating is keeping you from the good health that you deserve and how you can dramatically improve your life by choosing
delicious gluten-free food and a balanced lifestyle!
Have you spent most of your life feeling well, not so great?
Are digestive problems keeping you from living the life that you really want?
Do you find yourself running to the ladies room all the time or not being able to go to the bathroom at all?
Has a doctor told you “That’s just the way you are; add more fiber and you’ll be fine?”
I suffered with these problems for years. I was always uncomfortable, my clothes never fit, I had painful bowel movements, had acne, skin rashes, experienced itchiness and redness on my face and ears, I suffered from major brain fog and an emotional rollercoaster that made me less than pleasant to live with. I had no idea that it was the food I was eating. I was told and believed that it was just me, high strung, sensitive to smells and allergens, slow digestion and a little neurotic. Not so! It was the food I was eating. What a relief!
I found, through my method of discovery, diet and lifestyle modifications, that I can feel great, lose weight, have mental clarity, stable moods and emotions that have enhanced my life dramatically.
My 48 years of digestive suffering is now a thing of the past. I spent over 18 months playing with my diet and adjusting lifestyle to come up with a perfect balance that has me feeling great, having tons of energy and happier than I have ever been.
I created this club to share my knowledge and love of great tasting, fast to make food, and a fun and fulfilling healthy lifestyle so that you won’t have to go through your life suffering.
In this 26 week program you will:
*Learn more about gluten and how it is affecting your health.
*Know that you are part of a huge community of women that have the same problem.
*Learn what food is off limits and the tons, yes a ton of delicious food that is yours for the eating!
*Decide how being lactose intolerant may also be affecting your health and how you don’t need dairy to have strong bones and a healthy body!
*Learn how to keep your blood sugar in line, thus helping you to lose weight and lower your risk of developing diabetes.
*Go on an audio shopping trip to a health food store where a gluten-free expert will talk about all the delicious prepared food that we can eat!
*Learn about what supplements should you be taking and what to avoid (yes gluten may be hiding here too).
*Learn important information on how to set up your “shared” gluten-free kitchen.
*Be shown cooking tips that will help you take your classic favorites and make them gluten-free. I do not believe in deprivation here!
*Receive cooking videos that are fun and filled with information so that you can learn how to make meals that are easy, quick and full of flavor. Oh and did I mention fun? (maybe a bit crazy!)
*Learn how to entertain, go out to restaurants and attend parties without feeling like the spotlight is on your digestive restrictions.
*See a video of how an image consultant helped me find the clothes that would compliment my new svelte look. She will give us tips that everyone can use! You’ll love this one.
*See how we ask experts how to improve our relationships, finances and how to organize our life!
This isn’t just about food it’s all about your Gluten-Free life!
Oh and yes, did I mention…….Baked Goods Galore! You will be making that cake and eating it too! Life is to be enjoyed and we are taking the joy back! (on a plate with icing!)
You will get all this information delivered to your email inbox once a week for 26 weeks. You will get informational audios for the first few weeks than get cooking videos (and I am a crazy woman with food – can’t blame that on any food issues – darn!) recipes and healthy living tips.
This 26 week club is jammed packed with so much information and fun that you will have to see it to believe it. I am probably embarrassing myself but hey it’s all in the name of good health, no?
My clients will attest to the fact that my programs work. See what they had to say:
“I approached Mindy with a digestive problem that my doctors weren't willing to address. I enjoy cooking and feel I eat a pretty balanced and nutritious diet but couldn't get a handle on what was the problem. Mindy has been great in paring my diet down to some basics and helping me to rebuild it without problems. I have reached two of my goals with her which was to lose some unnecessary weight and discover some new foods. Her enthusiasm is contagious. Have fun.”
“Mindy is so incredibly enthusiastic! She makes the learning process for eating nutritiously a total adventure. I loved every minute and learned so much at the same time. I would recommend her whole-heartedly anytime!”
"Mindy Kannon is one of the very best things to happen to me! I’ve been working with Mindy since November 2010, and my impetus is to improve my diet and fine-tune it in such a way as to help with a digestive issue I had been having. Her skilled insights and recommendations have been right on the money. My digestive challenges are now calm and my gastroenterologist was impressed by my dietary measures. Mindy is both an excellent sleuth and a tremendous support, always with great cheer. I find our bi-monthly sessions very supportive and refer to Mindy as my “Food Coach.” It’s nice to know that I don’t have to do this alone and the recipes and encouragement work together in positive ways. Whatever your health goal, Mindy takes the time and energy to customize a plan especially for you. You have to do your part, but, thankfully, it is “delicious” work. I have found working with Mindy to be a successful collaboration and can’t recommend her highly enough. Thank you, Mindy!"
“Working with Mindy has changed my life.
Before working with her, I was a stressed out and exhausted business owner who rarely took the time to cook, let alone workout or spend time with family and friends.
As a result of working with Mindy, I have changed my lifestyle. I have taken control of my health and have made my personal well-being a priority. As a result, I have enjoyed significant weight-loss, have more energy and am sleeping much better.
I now plan my meals each week, workout regularly and continue to educate myself on the proper way to implement a plant-based diet. In fact, working with Mindy has helped me discover a new passion and hobby – cooking!
Mindy’s approach to health coaching is non-judgmental, motivational and enthusiastic. The passion she has for her work, and for her clients, is inspiring.
Quite frankly, working with Mindy is one of the best personal investments I have ever made.”
- Heather, Stratford, Connecticut

In a perfect world, we would get all the vitamins and minerals we need from the food we eat. Well this isn't a perfect world and much of what we eat is nutrient deficient.
I rarely recommend supplements to my clients though I feel very strongly about a few. Magnesium is one I whole-heartedly advise my clients to take.
Having had constipation issues for most of my life, I set out on a journey to find just the right combination of foods, exercise, fluid in-take and supplements that would get and keep me regular. Magnesium is a huge component in that formula. Besides supporting the elimination phase of digestion magnesium does a ton of other important things to keep you healthy.
The vast majority of adults are magnesium deficient. Here's why.
Processed foods lack magnesium! Processing and cooking foods depletes many needed nutrients.
You need a certain amount of stomach acid to absorb calcium and magnesium. Certain conditions as well as antacids deplete your stomach acids.
Some foods are high in oxalic and phytic acid and block the absorption of magnesium.
Junk food is lacking in magnesium.
Food is grown in magnesium deficient soil.
Many prescription drugs cause a magnesium deficiency.
Here's what to do -
Eat a portion of your vegetables raw.
If cooking - steam quickly so they are still crispy.
Avoid eating Swiss chard, soy beans, and spinach on a regular basis as they contain oxalic acid that inhibits absorption of some key vitamins and minerals.
Avoid junk food.
Support organic farming. They understand the importance of the health of the soil and so their vegetables are more rich in nutrients.
Eat whole, organic fruits, vegetables and clean protein.
Supplement your diet with magnesium.
The power of Magnesium....
(and these are just a few...)
Helps with anxiety, depression, adrenal health and serotonin production.
Improve or eliminate muscle pain.
Protects against the toxic effects of chemicals such as food additives.
Is a blood thinner keeping things flowing and preventing vessel spasms.
Relaxes head and neck muscles that make migraines worse.
Helps to prevent muscle spasms of the heart blood vessels thus preventing heart attacks.
Reduces calcium build-up in arteries.
Increases bowel function which reduces toxicity and
increases the efficiency of the absorption of nutrients.
As with any supplements it is important to do your research into how they will interact with the medications you are taking as well how this supplement will effect other conditions that you may have.
For more information check out The Miracle of Magnesium by Carolyn Dean.
This supplement has made a huge difference in my digestive health.
